Norwegian Salmon Burgers

If you’re looking for a seafood burger that’s both juicy and packed with heart-healthy omega-3 fatty acids, then look no further. Tuck them in between lettuce or pair them with a beautiful brioche bun for a meal that the whole family will love. These burgers also freeze easily so making double and freezing for a lazy week-night dinner is ideal!

Ingredients

  • 1 slice whole-wheat bread, cut into pieces

  • 340ml salmon fillets, cut into smaller pieces

  • 330ml prawns

  • 2 onions, thinly sliced

  • 2 tablespoons fresh dill

  • 2 tablespoons mayonnaise

  • 1 beaten egg

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

  • 2 tablespoons olive oil

  • 4 large lettuce leaves

Method

  • Put the bread in a food processor until ground up finely and transfer to a large bowl.

  • Add the salmon, prawns, and pulse until ground up as well, add to the bowl with the breadcrumbs.

  • Add the onions, dill, mayonnaise, egg, salt, and pepper and stir well to combine.

  • With damp hands, form the mixture into 4 patties and chill for 10 minutes.

  • Heat your oil in a pan over medium heat and add the patties without moving them until golden brown underneath. This should take about 5 minutes.

  • Carefully flip them to cook on the other side and reduce your heat slightly for about 5 minutes.

  • Tuck your burgers into lettuce or on your bun and enjoy with a slice of lemon on the side.
